  • Lola!Lola! I've forgotten how to cook Inihaw na Adobo

    Inihaw na Adobo

    Ingredients

    • ½ kilo chicken legs or thighs ( or liempo or squid)
    • 1/3 cup vinegar*
    • ¼ cup soy sauce*
    • 3 cloves crushed garlic
    • 1 bayleaf
    • salt & pepper
    • ½ cup water
    • bamboo sticks
    Procedure:

    Marinate chicken legs or thighs in a mixture of vinegar, soy sauce, crushed garlic, bay leaf, salt, and pepper for one hour. Place chicken and the marinade into a pan and add ½ cup water. Simmer until chicken is half done. Remove chicken from the sauce and skewer on bamboo sticks. Grill over hot charcoal until completely cooked.

    Tip: You can also grill the chicken on an electric grill or oven or oven toaster.

    *Our Lolas' usually use Coconut Brand Soy Sauce, Marca Pina, or Knorr, you can use any brand even Chinese brands.But try to avoid using Kikkoman for this recipe because the effect of too much garlic in Kikkoman is just not the same as it is with our native soy sauce.

    *Our Lolas' favorite is Datu Puti vinegar. Putting Heinz or Del Monte will do but it won't taste like our lolas' recipe.

    Pasalubong Requests

    Back in Pinas, its summertime again! School's out! Kids pack up their school bags and start packing their swimwear to head for the beach. Many Filipino families, however, opt to bring the whole family to visit relatives abroad, and more often than not, they land in the vicinity of that magical place called Disneyland. So for Fil Ams in the vicinity of this area, prepare for a deluge of Pinoy visitors and just to make the most out of this visit, prepare a list of your favorite pasalubong requests.

    Based on time-honored tradition developed through over 30 years of pasalubong-giving, here are the top items you can ask friends and relatives to bring for you when they visit you this summer:

    Food

    1. Sweets: Chocnut, Dried mango, White Rabbit
    2. Chips: Jack & Jill Potato Chips or Cheese Curls, . Chicharon Lapids or Porky's Best, Banana Chips

    Don't You Just Miss - dirty ice cream, white corn & ballot?

    White Corn:

    A guy clangs a hallow tin simulating a bell, he rides his bicycle leisurely, a plastic or aluminum pail hanging behind his seat. He is peddling soft white corn that has been torn from its cob, he places it on fragrant banana leaf, adds salt and freshly grated coconut shreds. Nowhere in the world can you find anything similar to this!

    Taho:

    The typical "Manong" ( elderly man) straddles across both his shoulders a long stick of what seems to be split bamboo. Both ends of the stick are tied to aluminum buckets, one bigger than the other. He hollers "Taho!" as he stoops down from the weight of his ware. He peddles the healthiest "merienda"(midmorning or mid afternoon snack) in town, soya with syrup/molasses & tapioca

    Balot

    In the middle of the night, what sounds like a yodel can be heard to be coming from the corner of the street. "Penoy Baloooot!," the yodeler says. He carries in his arms a basketful of warm duck eggs all covered up in newspaper.. and plastic bags full of chicharon hanging out from the basket handle. He peddles the Pinoy delicacy that placed Philippines in the limelight not so long ago through the show called Fear Factor: duck egg complete with warm duck fetus


    Household Tips - Doors & Windows

    Household Tips

    Cleaning Window Panes: Use vertical strokes when washing windows outside and horizontal for inside windows. This way you can tell which side has the streaks. Straight vinegar will get outside windows really clean. Don't wash windows on sunny day. They will dry too quickly and will probably streak.

    Cleaning steel window frames or steel alloy frames/casements: Dust or wipe with a damp rag, then brush lightly some lacquer thinner. After each application, wipe it immediately with a dry cloth so that the paint will not melt. This provides up to 3 years of protection.

    Dirty Wooden Frames: Instead of lacquer thinner, use paint thinner to clean varnished wood windows. Just make sure it is wiped dry immediately after each application. Similarly, when using damp cloth to clean windows, let it dry quickly afterwards.

    Doors' Jammed Locks: Clean and lubricate moving parts with machine oil. Since oil locks every six months, do not expect this to be a permanent solution.

    Doors' Locks & Hinges: Generally, 5 years after installation, screws may loosen, locks may become defective, or hinges may become rusty. Apply automotive fluid to remove rust before applying machine oil, then tighten or replace screws when necessary.

    Icy Doorsteps: Get warm water and put Dawn dish washing liquid in it. Pour it all over the steps. They won't refreeze.

    How to Liberate Yourself from Innate Pinoy Mentality

    Many of us find ourselves bound by some inherent Pinoy attitudes which, inadvertently, have been controlling our lives: The first step is to spot them , the next is to put up a defense against them. 400 years of Spanish influence have left the Filipinos with both good and bad habits & philosophies in life. As luck would have it, most of the bad ones remain with us to this day. Here are alternative philosophies to espouse when you find yourself falling into any one of these deep-seated attitudes:

  • Pinoy Mentality
  • Ningas Cogon




  • Hiya which makes us afraid to fail and lose face and eventually makes us a poor loser
  • Pakikisama which makes it hard for us to say no and puts other people in the center of our lives




  • Utang na Loob which binds us to certain obligations to repay a debt or return a favor

  • Bahala Na attitude which leads to the Manana Habit or procrastination and leaving things to chance
